Title: Summer Sausage questions

Going to make some deer summer sausage and my questions are how lone can I keep it in the frig after stuffing before I need to smoke? I have the deer ready to grind but not able to smoke until Friday. If I grind and stuff on Tuesday will it be OK until Friday? I have jerky to do first. What smoke do you people use? I have used Hickory and apple and I am thing of using Jim Beam I have used it on my jerky and friends love it. Thanks for all your help

We just put together 20l# of summer and 15# pepperoni and plan on a 36 hour hang in the fridge I figure the longer the better up to three days.  Today we will do 50# of garlic with another 15lbs of summer different recipi but that will all hang for 36 hours as well.  That way we can start smoking in the morning instead of late into the night.  I will post pics and other infor when we are done.
