I had a yard bird in the freezer waiting to be smoked, and decided to make a sweet sage chicken.

Gathered up the ingredients:

Mixed it all up in a bowl, injected and soaked the chicken overnight.

Started up the smoker, pre-cooked at 250 and prepped for 3 hours of apple.

Alas - the chicken is complete.

How big was that bird?
The only ones I see in the store are scrawny little 4 pound fryers...
He was a healthy 5 1/2 pounder. Yummy leftovers.
That Chook looks So tender ! Yum ;D
