Title: Small Chicken or Large Pigeon??
Post by: smokeNcanuck on January 31, 2010, 03:24:41 PM
I did my fist smoked chicken today.  It was a little on the small side, though maybe wife grabbed a large pigeon by mistake. ;D
Oh well, either way I'm smokeN it!  Started with a basic brine last night with a few extras thrown in for good measure. A light rub
this morning and then off to the preheated OBS.  Smoked for 3 hrs on a mix of Mesq. and maple, then left till IT hit 170.
Like others have said the skin was real chewy, next time I'll throw on gas Q to crisp up.( too cold -6C and snowy today)
The chicken was one of the best I have ever had!!
Hear is a few pics to get your mouth watering :D :D
