 Can I run the cable for my remote temp probe thru the vent hole and into the TB?

Yep.   Through the vent, or through the door.  Either way works.

Take it to 165*, foil it and let it rest for a bit.

Turkey breast I will only take them to 155°F, dark meat I will go to 162°F - 165°F.
