Hi everybody I have been lurking here for a few days. Long enough to have ordered a Bradley propane portable smoker. I have a BGE and have smoked everything that will hold still long enough with great results but I really like the idea of the cleaner smoke with the option of cold smokeing & portability. I guess I would like to start with cheese and nuts. I am still waiting for the smoker to get here so to occupy my time I am pondering on which equipment to use with what specific application (Big Green Egg Vs Propane Smoker) I really like the BGE for butts turkeys and duck for a long cook but my ribs IMO are just OK. The clean smoke with the option to finish on the egg sounds kinda good. Anyway its great to be here and I cant wait to get the propane smoker and break it in.

I dont have the propane smoker, so I may be way off base, but I'm not sure you will be able to cold smoke cheese in it.

That's interesting, I don't own the BPS, but when I bought the cold smoker attachment they sent me a plate to use for the BPS as well as for the DBS.

The plate is used for the BPS generator that can be attatched to the Bradley cold smoker. Or you can use both to attatch to a home built. The BPS generator wont fit into my OBS or DBS.

Cheese is on day 8 in the fridge and just sliced the pastrami. Looks like Rubens are in order.
My cheese also. I have to pounds medium cheddar and 1/2 pound of cream cheese in the fridge. Gave them 3 hours of alder while smoking my salmon (lox). Will try it next Sunday. Thinking of the Red Lobster biscuits with smoked cheddar after reading the recipes posted on this forum.
Welcom, I need to try cheese soon myself. The Admiral makes pizza once a week and a smokey BBQ sounds great!

Smoked Mozzarella on pizza is GREAT.
