I'm picking up my Bradley this weekend.  I've been roaming the forums for a few months until i could talk my wife into letting me buy one.  Thanks to my annual bonus I'm off to the store and can't wait.  I haven't been this enthused about a new hobby since i built my mame arcade machine.

I've got to go out and buy some pork butts this weekend after i get it primed and ready to go.

Remember the key to a good smoke is "Slow and Low" so dont freak out when the butt stalls at an IT of 160 F for hours on end.

The BIG plan.

Buy OBS on Saturday.  Clean and prime the beast. 
Sunday get everything ready to go and load her up.
BBQ feast on Monday...posting pics along the way of course.

I'm salivating already...I did an all day pulled pork in the oven that was actually pretty good but i know this will blow it out of the water.

Clean and prime?

Wipe walls with a paper towel, then season the smoker according to directions.

If you want to get a jump on your owners manul you can go to Bradley home page and down load it.

It makes things easier the first day.

You are going to love it. I just cold smoked 7lbs of cured Atlantic salmon, 2lbs of old cheddar, 2 lbs of medium cheddar and threw in 1/2lb of cream cheese for kicks yesterday. Salmon is awesome, have to wait about 2 weeks from what I've read to try the cheese.

I did the Smoked Gravlox (twice now) out of the Bradly Smoker Cookbook.  came with my OBS and is available on their website. I used alder for 3 full hours.
