Title: Meat Connection
Post by: GusRobin on February 13, 2010, 06:24:35 PM
I've been looking for a place to get pork bellies to make bacon. Found some at a local Asian market but the cut of meat ended up not to good, mostly fat. Yesterday someone told me about a local meat market so I stopped by today. Their pork bellies were frozen, but they looked to be pretty good cuts and were only $1.99 lb. So I bought 10# and have them in the fridge curing as we speak. Sorry, was so excited to get good meat forgot to take pictures, will do it when I smoke in about 10 days.
As I was going to the register I happened to glance in another meat case and notice they had boneless rib-eye for $3.99lb. Don't know what you pay in your area but here a very very good sale price is $5.99, normal is about $7.99. So I picked up a 10# ribeye roast. Cut off a couple of thick steaks, added a blackened rub, and cooked. They were probably some of the most tender steaks I have had in a long time. Hopefully the sale is still on tomorrow as I plan to go back and get another big piece. (maybe some more prok bellies?). Now I know how an addict feels when he finds a good connection :)

Those are some great prices for Rib Eye if they are choice or prime cuts.  I need to get some belly here soon as well.  Been a while for me and my last belly was also a bit on the fatty side but the butcher cut me a discount because of it.  :)

Um.... should I tell him or does someone else want to tel.........Ok,oK I will tell him. We hate to have to tell you this, but you are an addict OK, so don't try to hide it and above all else, resist all attempts of any sort of intervention. Just breath in the smoke and you will be alright.

My wife is MY meat connection.... She works at a JBS Swift pork plant... I can usually get pork bellies for anywhere from 40 to 60 cents a pound,  special loins for 49 to 75 cents a pound and Boston Butts for around 60 to 80 cents a pound. Price fluctuates depending on hog markets, but all in all vey cheap for employees....
