The lady that runs our cafeteria orders these for me... It's a Perdue Food service item - all white meat. I think that one was around 8.5 pounds.
I FTMd it until it cooled enough to stuff in the fridge overnight. I'll cut it in half, and run through the slicer tonight.
What temp did you cook it and how long did it take ?
How much of the 8.5 pounds do you yield ?

225* for an hour, then up to 250* on my Traeger. It was all but frozen solid when I put it on, so it took quite a bit longer than it really should have. Total time was just over 6 hours.
I was cooking dinner on the other side, so I had the lid open quite a few times as well.
I'll weigh it when I pull it out of the fridge. I should have weighed it before - but the case weight (2 per case) was just under 19 pounds. My foodservice connection can get these for $2.25 a pound.

It was a tight fit! I'll slice it up tonight. I have to dig my car out of the driveway so we can go see a movie today.. (and do some grocery shopping)

The reason I asked about the time and temps is I wonder what would happen if you did one like a roast beef - 200F for as long as it takes - maybe less shrinkage - but it would probably take forever to get to 165F or so...
Those come off of TurkeyZilla - or at least "well endowed" Turkeys!

I've done a couple in the Bradley at 225, and they take a bit longer. This past Thanksgiving, I put a 1/2 frozen one in the Bradley at midnight, and it was ready around 7:30AM the next morning.
I pulled this one around 153*. It was still hot to the touch a couple hours later in the FTM.
