Here are a couple of pictures of some spareribs that I smoked today. I used Kansas City rub recipe from Smoke and Spice on half of them. I tumbled the other half with Famous Daves Original BBQ sauce. They both taste great! Total Smoke/Cook time was 5 1/2 hours. I smoked them for 3 1/2 hours using pecan. This is a very good wood to smoke with IMO. This is the first time I've had a chance to use pecan for the whole time of the smoke. I also used a rack of bacon on the top shelf.

How long was the total cook time?

Some say BBQ is in your blood, if thats true my blood must be BBQ sauce.
To clarify Cook/Smoke time on spareribs. I smoked these for 3 1/2 hours with a total of 5 1/2 hours at 225 degrees. I suppose a couple of hours of this time the temp was under that as I had to open the door to add bakers and I checked the water bowl at 4 hours. I also used a rack of bacon on the top shelf to self baste.
The smoker was sitting in front near the driveway. I was in the backyard doing yardwork and I could smell these cooking all day. They smelled so good!
P.S. With bake potatoes in the smoker for 4 hours, I had to finish in the oven for 1/2 hour @ 350 F degree temp. I thought they would be done in 4 hours. They were probably 70 count potatoes. (Pretty good size.) Next time I will start the potoatoes ASAP.
