Title: Making Chorizo

Hi All

I am sure there is a thread with this in but couldn't find it.  I am planning to make my first batch of chorizo this weekend.  I want to make some uncured and some cured.  Has anybody got any proven recipies I can try?

Chorizo is not usually smoked, if you smoke add cure.
