Title: Summer sausage

I've been wanting to make some summer sausage.   Actually I'm itching to make some and using the fermento I bought.    Decided I'd do  Hi Mountain kit but the hunting store where I usually buy all my supplies hasn't had any HM kits for months and aren't expecting any any time soon >:(.     Their supplies of bisquettes is way down and there are some they don't have.    I knew there was a fishing tackle store that has the bisquettes so decided to give them a try.   Actually that's were I bought my 6 rack DBS as the other places was out of them too :-\.    Got the bisquettes I wanted and low and behold there was a box of Hi Mountain Summer sausage kit.    HMMMM.   Now I've got another project.

Good to here you found what you were lookin for.

Now you have to decide which one to make, the salmon or the summer sausage, what a dilemma to have.

I think the salmon will be first.    I'm also looking forward to the summer sausage.   I'm only going to try 3lbs for the first batch.    Hate to make 30 lbs and find out I don't like it.   It will also give me a chance to try out the new PID.   Plenty of step up in temp for the process.

Hi Mountain is pretty good, but I would recommend using less meat than the recipe calls for (ie.  use 10 total lbs of meat to the 15 lb seasoning packet) if you want really good flavor.  Just my 2 cents

I've made the HM summer sausage before and it was pretty good.    Only thing I added then was mustard seeds.    This time I want to try some fermento too.
