I have a freezer that no longer works and was thinking of making a cold smoker, the catch is that the interior is constructed of plastic. Any thoughts,suggestions,warnings,links,etc?
Clean it real good with 1/4 cup of bleach to 1 gallon of water, shelves, seal. As long as you dont exceed 80-100* you will be fine, Anything higher and the plastic will start leaching toxins.

I have one, if you live in PA, NJ or close you can have it.
Stick with the metal fridge daikonmike. Even at just 100 degrees the plastic inside a regular refer gets warped a bit and absorbs oders that linger on to the next smoke. The first half dozen smokes get a funny plastic type smell coming out of the refer too. Just sharing what happened when I tried it years ago. Good luck with what ever you decide. :)
there are still some old metal fridges out there.
I contacted scrap metal dealers, stopped at established 2nd hand appliance dealers, etc.
I have ran across 10 to 15 different "metal" boxes.
Check on craig's list! Put a wanted listing on Craig's list.
One will find it way to your house.
If you could find an old soda pop box at an antique/junk store, that might work...
The kind that's all metal, on legs, has two sliding doors on top...
They were insulated and metal inside & out.
Of course, they're still pretty cool for what they were made for too...
