I plan on doing deer sticks tomorrow and outside temp is supposed to get up to mid 20's. Will it be ok to bloom my sticks in a snow bank instead of cooler with ice in it?
If you do, make sure it's not yellow snow. ;D
I dont think i would. Too much stuff blowing around and into the snow.
I'm with Nepas, who knows whats in that snow. But of course I came home the other day and my kids were making snow cones with snow from outside and there still alive ;D

You can use a snow bank, cold water or ice water to shock the temp of the sausage down under 100 degrees after you have reached your desired IT.
Blooming sausage is not the same. After the shower you hang the sausage to allow them to bloom for up to 2 hours. The Bloom period is to develop the nice mahogany brown color, in addition, the bloom period also dries the surface of the casings to give them that nice snap when you bite them.

Blooming is something I've never done and probably should have. I've had sticks made commercially and they all snap when you bite into them. Mine don't. Now I know why.
