Title: portuguese sausage

I would like to try to make Hawaiian style Portuguese sausage for my in-laws. I know of course ground pork and garlic, but not sure what else? I plan on using mesquite pucks, any help would be appreciated

Here is a recipe. I believe it is a modified version found in Rytek's book.
