Title: Temp was to low first stage of rib 3-2-1 method
Post by: JustusIV on February 21, 2010, 02:12:30 PM
So it cold outside and my smoker was struggling get over 200 degrees for the first stage of the 3 2 1 rib method. Can i just extend that time since alot of that time the smoker was not hot enough? So like a 4-2-1 method or something?

You were still getting the smoke even though the temp was low you can go 3-2-2/3 if you have to. The ribs will tell you when they are done and the meat will pull back from the bone tips about 1/2 inch. You will be fine
