I just wanted to know what you guys think a minimum FTC time is for an 8lb butt taken out at about 185F?
Im thinking 2 hrs +, Im not working on a deadline, but if people start getting hungry I wouldnt mind opening it up a little early.
This is my first smoke so my other random ? is how many Bubba Pucks do put on a stack of bisquettes?
Thanks
Butts are pretty forging drey.
I like to go to a higher IT of 195 and then FTC.
At that temp, you can open and pull after just a short time or let let them set for hours.
Use 3 Bubba Pucks to push that last one off the burner.
Good luck and keep us posted.
;D
As far as minimums go I have used none.
I do agree to take it to at least 190-195.
I would say if you are going to FTC then an hour would be the minimum, a half an hour is hardly worth the effort.
Ditto to FLBR's response. Minimum= none, 190-195 IT and if you're going to FTC, then at least one hour but there is nothing that says you must FTC at all. It's more of a holding mechanism in my opinion.
I take mine to 192 and have FTC'd as short as 1 hour and as long as 5 hours. Surprisingly even at a 5 hours FTC the Butt is still hot enough to burn your fingers. Its hard to tell if the length of FTC'ing matters since every butt is different anyways, some are more fatty, some come out a little dryer. I have never had bad pulled pork from the OBS yet, even though I have unknowingly tried to mess it up more than once.

Thanks for the help, makes sense enough to cook it to 190/195 if there is the chance I might do a short FTC.
With the OBS, do folks generally wrap the butt in foil after using smoke? Ive heard it helps keep it from drying out, but Ive had some good pulled pork that was open in the smoker.
I haven't ever wrap a butt with foil, just go nakeed.
Mine always go in the smoker naked.

Yep, my butt's naked too! :o No foil.

And I like to give my Butts a little LOVE slap before they go in the smoker.

I will certainly apply ALL of the knowledge you have imparted upon me. Rub and wrap tonight, smokes on tomorrow!
I did my first smoke of pork butts (two) this last weekend. Went to IT of 190 wrapped in foil and stuck in the oven--the oven was turned off--for a little over an hour. The almost fell apart on their own. Very happy with the result.
