Title: My Bradley OBS - Back in Black!

My Bradley has been feeling a bit neglected since my Traeger arrived (and the weather has been cr@p).  So I dusted it off, and fired it up tonight.   I even re-seasoned it with a couple hours of Apple, to give it a fresh coat of smoke.

Dropping in next..   Chuckzilla!  (8.5 lbs)    Slathered in CYM, and hit with a lot of Magic Dust.

I also injected it with a 1/3rd cup of this:

Here we are, getting a CRG amount of smoke. (1 entire package of Oak, plus 1 spare Apple from the re-season - 4+ hours!)
I've got a full sized pan of water on the bottom, al la Pachanga.

5AM check...    Chuck is at 165°.

8AM peek, and dump/refill the water pan.

IT was 174°.

Pat what is that Big Black cable hanging down? Is that for your PID?

Yeah, that is the temperature probe for my Ranco controller.  I just snake it in/around the racks.

I wish my outside looked like his outside!

Stupid snow.....but I did see a cardinal yesterday.....spring on the way??

Our snow all melted this week.   We touched 40 once or twice, with lots of sun.


Ok, the chuck was stalled at 171°, so I got creative.

Some quick work to get the plastic handles off, and instant Traeger braising pot:

(splash of Cranberry juice, and a few glugs of red wine in the bottom)


I'll let it hang out in the Lil Tex until we have to get ready to leave this afternoon..  My crock pot is delivering the pulled pork, so I can't use that.

The ones around here split for the winter...smart birds. (or they go underground)

I have one that appears around spring time back behind my shop every year and nests.

Then the robins start showing up.

Wow!  40 degrees?  I remember once a long time ago when it was 40 degrees in Northeast Nebraska :-\.  If we get to Tuesday without hitting 40, it will be 91 days in row under 40, a new record for this area :o.  Oh well, we can't go much longer... :-\

P.S.  that is one good looking chunck of Beef!!!!

Yeah, this is the most sun/warmth we've had since mid-December..   January was dark/cold/awful.  I don't think it ever got above 20.  The lack of sun has been hard on people, we've been at each others throats at the office.

My back yard was a swamp up until a couple days ago.   I had water standing all around the Bradley patio.


The roast is rising through the stall period now..   I'll put it back in the Bradley at 190° when we leave for church/dinner, and will fetch it later tonight.

(I'm just burning through some nasty Traeger pellets now that are mostly crushed/sawdust - otherwise this would be a very very expensive crock pot substitute)
