Title: Beef Jerky, hawaiian Style-Maui

A friend gave me this recipe about 20 years ago and I made it quite a few times but haven't for years.   I thought of it the other day, found it and thought I'd share here.

3 lbs beef (can sub wild meat)
5 ts salt
5 ts ground ginger
1 1/2 ts black pepper
5 tb brown sugar
1 ts cayenne pepper
6 cloves of garlic (crushed)
1 1/2 cups pineapple juice (unsweetened)
1 1/2 cups  soy sauce

Mix all ingredients in a blender.   Cut meat in strips 1/4 inch thick.   Put meat in marinade for 10 - 16 hours.   Smoke in a smoker.   
The friend used to do his in the oven at 140 but I prefer the smoker.    I've also done it in a dehydrator and then added a little liquid smoke to the marinage
