Title: Will full rack fit?
Post by: db14 on March 02, 2010, 12:27:47 PM
Another question here as I prepare for the arrival of my OBS, will a full rack of ribs typically fit in the smoker or do they need to be cut?  I would prefer not to cut them if possible, but I guess it would hurt them too much.

Full racks of Baby Backs fit fine I know

It depends. I can usually bend my baby backs, but the last batch I did was still partially frozen so no bending.

I cut them to fit.

It was fun re-assembling them for the foil stage.

Spare ribs are longer, I prefer them over baby backs. Spare ribs I have to cut the last 3 ribs off to get them to fit on the rack. I cut them off the smaller thinner end, and place all the short pieces on another tray. Others like to either cut them in half or in thirds.

I'm with Habs in preferring spare ribs to BB's.  Yeah the rack usually has to be cut but it's dead anyway, so?  I'd do the 'third' on the top rack and the 2/3 on the next rack down.  But, that's just me.  Enjoy.

I do mine like Hab's.

Take a full slab of spare ribs and st louis style cut them (square up the top and smaller end)

Add all the cut pieces to a rack above the full slab of ribs.

They are usually done early so I get to nibble on them.
