Title: Tried the S&S recipe for Chicken Oregano

Last night.  It was alright.  The chicken was moist and I finally relaxed enough to trust their cooking time instead of overcooking (which I do on chicken just because)  My husband, who does not like chicken (I think because it is healthy) said it was the best he ever had.  
I cut up the remaining chicken tonight and put it in white chili.  That was the best I have ever had with that recipe.  The smoke permeated the entire soup base and it was outstanding.  Now, I can only eat it with smoked chicken.
Anyone try any new recipes lately?

Smokehouse Rob,
What is your recipe?  Mine is like this:
4-6 chicken breasts, cooked and diced into small pieces
3 cans navy beans
2-3 cups chicken broth
minced garlic (I never measure, just put it in)
2 t of ground cumin
dash of pepper (sometimes I use white pepper)
1 can green chilis
diced onion (you can saute' them in olive oil before if you like, but I like the onion flavor to come out in the broth, so I put them in raw and let them cook with the soup)

Bring to a boil and then turn down heat, cover and Let simmer for 30 minutes.  The smoked chicken made it better than I have ever had!!

Your white chili recipe is very good.  My wife makes the corn chowder so I don't have the exact recipe at work but I do know it's great with smoked chicken in it[:D].

White Chili


3 16 oz cans Great Northern beans
4 cups cooked smoked chicken breasts, chopped
1 tablespoon olive oil
2 medium onion, chopped
4 garlic clove, minced
2 4 oz cans mild green chilies
2 teaspoons ground cumin
1 1/2 teaspoons dried oregano, crumbled
1/4 teaspoon cayenne pepper
6 cups chicken stock or canned broth
3 cups Monterey jack cheese, grated i use pepper jack its better
sour cream

Cut chicken breasts into cubes. Heat oil in same pot
over medium-high heat. Add onions and sauté until
translucent. Stir in garlic, chilies, cumin, oregano
and cayenne. Sauté for about 2 minutes. Add undrained
beans and stock and bring to a boil. Reduce heat and
add chicken and cheese to chili. Stir until cheese
melts. Season to taste. Garnish with sour cream

Corn Chowder
 

Serving Size: 12
3 cups creamed corn
2 cups kernel corn
1-1/2 quart heavy cream
3/4 pound applewood-smoked bacon
1 cup onion, chopped
1 cup celery, chopped
3/4 cup leeks, chopped
3 cups diced potatoes
3 cups chicken broth
Sea salt
black pepper
Simmer the corn and cream for 5 minutes. Cook 2 strips of bacon until crisp. Sauté onion, celery, leeks, potatoes and remaining slices of bacon in saucepan. Add chicken stock, bacon, onions, celery, leeks and potatoes to the cream-corn mixture. Simmer for 30 minutes and season to taste.
Garnish with cilantro and chives, swirl in lime juice, and top with crisp bacon crumbled - if desired.

Man, I sure agree with that.  It is just 8:00 a.m. here in California, a rainy day, and both chowder and chicken soup would be wonderful on a day like this!

WOWZA! I'm going to the fridge now. I had some left overs. 4 racks of ribs, and 2 Boston buts. I'm going to make up a nice soup with one of the buts and maybe a couple pulled pork sandwiches with BBQ sauce. Oh boy!!! Something to do on a rainy day can be fun. Looks like ribs for later on. Kirk.....what is with that white stuff. You can't smoke it but I do have a recipe for it. Put some in a cup, break up some bacon on top of it and  then top it off with some maple syrup. You'll be surprised how good it is.

Speaking of making soup...I smoked a couple of salmon yesterday and will make some smoked salmon chowder today.

I also made some candied smoked salmon jerkey. When I removed the salmon from the smoker, I brushed some of it with maple syrup and placed it in my food dehydrator for a couple of hours (brushing with syrup every 1/2 hour. Mmmmmm good stuff.[:p]

New recipe for me that I did last weekend was Thai Chicken thighs.Doubled the recipe for a whack of guests this week and finished them off by crisping them up on the grill. Turned out great.

12 chicken thighs, bone in, skin on
6T of fresh lime juice
1/4 cup of fresh orange juice ( I used grapefruit)
1/4 cup Thai fish sauce
1/4 cup peanut oil
1/4 cup brown sugar
1 T. Asian chili sauce
2 T. minced ginger
8 cloves of garlic, minced
1/4 fresh basil ( I used dried)
1/4 cup green onions
1/4 cup cilantro

Mix all ingredients together and add chicken. Marinate up to 8 hrs in fridge.
Smoke for 2 to 2 1/2  hours at 200 to 220 F.
Crisp the skin up on the grill....
Only thing better would be real Thai thighs...[}:)][:D]
