I wanted to share a project I have been working on for sometime now. I saw a number of people making larger smokers out of everything from old proofer ovens to blanket warmers. I decided it was time to go bigger. I was tired of making small batches of sausage. I searched high and low in my area to find an old cabinet I could turn into a smoker. I finally gave up and decide to get one built. I have a friend who owns a sheet metal shop next to my business who said he could build one for me. It has taken me a lot longer then I had planned, with a number of obstacles to jump over with designing and building a smoker. I also want to thank Mr. Walleye for all his great suggestions and ideas while I was building the smoker, it was a big help.
Smoker is 18 X 36 X 72 inside
Stainless steel inside
2" of high temp insulation
4 500 watt Bradley heater elements
2 -120 volt circuits each circuit runs 2 heaters
PID controller
Bradley Smoke Generator
I still have to add some more shelf brackets, I have 6 racks total, and order some frog mats to line each shelf. For sausage I have a number of stainless bars to hang the sausage over. It looks like I wont get my first smoke in, before my holidays start. So I will post more pics as I get it installed in my garage, seasoned and my first smoke after I return.
I hope this will all so help others in there designs.
