I am an American living in China. I want to build a smoker here. I found a proofing box that will go to 110 celcius (230 farenheit). Will that be hot enough?

Seldom do I have reason to go hotter than 210 F in my box. I take it your box will handle a full load at the temp you posted. Some don't. Also you have to consider the temp of the food you place in it for smoking. You load a box up with cold foods and it could take quite awhile before you get up to temp. If that is the case you could always add another heat source i.e. hot plate.

I rarely smoke over 205° - 210° F. myself. I like to go slow and I think it pays off. If I want more temp, I use the grill!

Thanks Olds and Bill. That's what I thought but I always like to get confirmation from people with more experience. I am going to open a BBQ restaurant here in southwest China. I'm not even open yet and two Chinese restaurants want to sell my food. I think this will be a nice business. I certainly don't know anything more American than Q.

I couldn't agree more. And myself being an Okie I was sure born to it. Another thing that I believe will be in my favor is that their beef is as tough or maybe even tougher than many briskets, so Q smoking may be just the answer for making it tender. If not I will import the beef.
