I've got the bradley full today. Six racks of spareribs in the smoker for a five hour ride. After getting a nice rub yesterday, the ribs are now getting five hours of Hickory, Oak and Pecan. After about 1 1/2 to 2 hours of no peeking I'll start applying a "mop" of Apple cider, beer, ketchup, worcester, etc... every 30 to 45 minutes. After five hours will wrap them and let em sit.
We live three doors down from a fire station so our local heroes will be getting a slab for dinner tonight. I'll try to post some pics if I can work my Mobileme thing. (See my post in the intro topics).
