Title: No Smoke for this Brisket

I know its sacrilegious to cook a brisket any other way than to smoke it but dont hate on me just yet, just read the post

My cousin from the great state of WV called me last night and wanted my recipe on how to make beef brisket because his wife wanted it made how I made it.  Oh boy???  I told him the first you have to buy a smoker and then he replied "Cant I just throw it on the grill?"  Oh boy -sigh-  :-\   I told him slow and low is the only way to go.  I think he's got a lot of leaning to do....
The two main problems here:  no smoker and the wife bought a market trimmed flat
I did some research on the best way to cook it and it looks like the crock pot is the best way to go based on his brisket cookin experience.  The recipe I sent to him was this:
3 pounds brisket of beef -- flat cut
1 envelope Onion Soup Mix
1/4 cup Ketchup
3/4 cup water
1 teaspoon vinegar
1/4 cup dry red wine -- optional (optional???? alcohol is a must I think  ;D ;D ;D)
4 bay leaves
1/4 teaspoon dried thyme
1/4 teaspoon dried marjoram
2 teaspoons granulated garlic
1/4 teaspoon freshly ground black pepper

Can you think of any other advice I can give him other than to move him and his family down to FL so I can smoke it for him?

Maybe sub Worcestershire for the ketchup, 1/2 a dark beer (Guinness works for me) for the wine, 1/2 a stick of butter to make up for the lack of fat..

Sounds like a plan..

I guess (Am I really typing this??) you could add a tsp or two of that liquid smoke stuff.

Snelly, You smoke him a brisket, vac-pak, freeze it, ups it to him.

Then fly up there and help him eat it.

Now there's and idea...  How am I gonna explain that one to the wife???  She already thinks I have lost my mind especially when she saw the smile on my face as I was slicing meat in the new meat slicer.   ;D ;D ;D ;D
