Hello everyone - what a lovely place this seems to be!
Having just got my father an OBS in the now sadly discontinued stainless for his birthday, we ran a little test with some venison, and it came out superbly!
Venison was in chunks, which worried me a bit but I thought I'd just adjust smoke and temperature to suit.
Marinated for 24 hours first in a variety of herby sticky loveliness and smoked for just an hour at 175f, so really low, and short.
Bit too much in fact as it needed a touch a grilling to finish it off later on that day but it was so tender and the small amount of smoke meant the gamey strength of the venison was removed rather than added too.
I'm off to polish it off :)
