Title: venison sticks with GB ?

Most including myself use boston butt with venison when making sticks.  Would beef trimming or fatty groundbeef work with venison for sticks.

I like to use 60% deer with 40% ground chuck, makes the sticks a little firmer than pork, but thats what I was lookin for.

When the chuck goes on sale for less than GB and I fill the cart.
