Title: Recipe request

I was thinking that something like a jalopeno cornbread would go good with ribs and pulled pork that I'm doing for mother's day. Does anyone have a good recipe. I'm looking for something between the coarse southern style and the northern johnny cake.

Jalapeno Cornbread



2 tbs oil

2 med jalapeno, finely chopped

1 med red bell pepper, chopped

2 cups self-rising cornmeal

1 cup self-rising flour

4 tsp packed light brown sugar

1/4 tsp ground black pepper

1 cup boiling water

1 1/2 cups buttermilk

2 tsp Tabasco sauce

2 large egg

1 1/2 cups cheddar cheese , shredded

1 can corn

 heat oil and cook chilies and bell pepper until softened, drain and set aside. Keep oil in pot. Measure 2/3 cup cornmeal into bowl. In separate larger bowl, whisk together the remaining cornmeal, brown sugar, and black pepper. While whisking, pour water into the 2/3 cup cornmeal, followed by the buttermilk, Tabasco and egg. Pour the wet mixture, and the drained can of corn, into the dry ingredients and stir just until combined. Mix in the cooked peppers and cheese.

Bake at 350 until light golden brown. Approximately 20 min.

Thanks for the recipe Rob. I don't really like cornbread that uses actual corn in it so I assume I can leave that out. What kind of flavor/texture does this have?

Rob,

Made your recipe tonight & man was it good![:p][:p] Moist & very flavorful.

Next time I think I will halve the amount of red bell pepper and maybe use creamed corn instead of whole. Tasted great, just not "corny" enough. Also might up the hot peppers. We used serrano instead of jalapeno and you still couldn't taste the heat. It was obviously there though, as I was sweatin' pretty good.

When you do this cornbread, do you use a heavy black metal skillet, do all the prep and then ultimately the skillet with all the ingredients goes into the oven, or do you use another pan/container to cook it?
