Title: Kicked Up Corn Bread

I made this before the Mrs got injured, and then I made it again today:

Does look mighty tasty.

I made some Smoked Salsa Verde yesterday to make some Smoked Salsa Verde Cornbread.

Send me 1/2 of your and I'll send you half of mine.

OU there is no salsa in it.  Here is the recipe:

Roxy's Kicked Up Corn Bread

3/4 C butter, melted
1/2 C white sugar
3 eggs
1 1/2 C buttermilk
2 jalapeno peppers, diced with seeds or without, your choice
1 C cubed Monterey Jack or Cheddar cheese - we used shredded cheese
1/2 C bacon, cooked and crumbled
Bacon drippings
1 C all-purpose flour
1 1/2 C yellow cornmeal
3 t baking powder
1/4 t salt
1/2 t cayenne pepper

Preheat oven to 300 degrees.  Place cast iron fry pan in oven for 10 minutes.
Pour bacon drippings into fry pan and brush to coat pan, reserve excess drippings.  BE SURE TO BRUSH THE SIDES OF THE PAN TOO.
In a large bowl, beat together butter and sugar.  Beat in eggs, one at a time.  Blend in buttermilk, drippings, and cayenne pepper.
In a separate bowl, stir together flour, cornmeal, baking powder and salt.  Add flour mixture to buttermilk mixture; stir until smooth. 
Stir in jalapenos, cheese and bacon.  Pour batter into prepared pan.
Bake in preheated oven until golden brown and a toothpick inserted into the center of the bread comes clean, about 45 minutes.

CRG, sure, we will send you half of the cornbread - can't guarantee how it will arrive.  It will probably be pretty crumbly....We will wait for our salsa verde corn bread as well!

Sounds great!

The bacon sounds good in there, thats the red stuff that made me think there was salsa in it.

Goin to give this a try, thanks seemore.
