Title: bacon question??
Post by: deadeye on April 30, 2005, 05:07:00 PM
Guys and gals. I need some help. As I get more use out of my Bradley alls I want to do is cook more on it. My family loves bacon and I mean loves it!!!!!! I was wondering what would be the best type of meat I should use to make it and also any recipe cures, and smoke advice would be greatly appreciated.  I know I read on here somewhere about some cures but I really need to know what type of meat to use. I have a bucher shop right around the corner that I think can help me with this?? How much a lb should I pay???

Thanks again

Derek

Derek,
You can use pork belly, boston butt, pork loin or pork tenderloin.  Search on buck board bacon, pork loin, bacon, Canadian bacon and you should find plenty of links and recipes.
