How long can u keep your mixed sausage in the fridge before you stuff it. It would have seasoning and cure mixed and ready to go into the casing.

I generally like to go 12-24 hours. But it is easier to stuff the sausages first then put in the fridge. Cold meat doesn't like to flow thru the stuffer very well.

Like 10.5 said mix then stuff, life will be easier this way.

The cure should still work for up to a week but will start to diminish over time and not work as well.

Mix stuff then put stuffed casings in fridge.
