Hey guys, I have a big pack (6lbs) of ground pork from costco...It says lean ground pork on the label, no percentages. I have a premeasured pack of seasoning from Stuffers to make Garlic sausage, needs 10 lbs, so I pulled out a bag of beef trim to grind up..that made 9 lbs, then I found a 1 lb bag of venison..
But I am thinking it might be to lean? Should I substitute some pork fat that I have for the 1 lb of venison?
Hoping to get an answer tonight cause I was going to mix it all before going to bed...
Thanks
James

You should be good to go with how your doing it.
Wow, quick reply from an expert! Thanks..This will be my first stab at cured sausage. Have made fresh a few times.

My costco here never has ground pork, sometimes its a little quicker to use than getting the grinder out
I can get it at 1 Walmart. Its 2.38lb. That is the way I do it when I am working with deer meat.
For those of you who are curious how it turned out here is a follow up:
