Hi there, I found this site trying to find a nitrate free ham recipie. I like smok'in stuff, so here I am. I must confess though, My smokers homeade out of an old water heater and a propane tank mated with a grill. but hey It works.

still lookin for the recipie

Cant help with the no nitrate ham recipe.

I use nitrite, cure #1 when doin ham.

Hi monsterbronc;

Welcome to the forum.

Try changing your search from "nitrate free ham" to something like "salt cured ham" or "country hams". That will give you more hits for the type of recipe you are looking for. Salt cured hams take a long time to cure, up to 6 months to a year. I'm sure there are some salt cured recipes that are much faster, I just haven't searched for any.
