Last night I made my second batch of sticks. I think they came out really well this time.
I added quite a bit more seasoning that last time. A few are still in the OBS just finishing cooking.
This is where my questions arise, this time I used 3 Lbs GB, and 2 Lbs GP. What is the min IT that is
safe to cook too. Also, when I was stuffing I noticed a few lumps of GB that were still quite red. Thus
leading me to believe that they had not got seasoned(they may have been a little frozen still)and if they
did not get seasoned that they also got NO cure. So am I still ok?? It was just the odd small lump.

Thanks Nepa, just was not sure if I needed to go higher because of the pork.
I was not too concerned with the small lumps of GB, but glad to hear someone else
confirm. ;)
