Got my Hot Italian summer sausage hanging this morning.

That sound good, I was thinking about making some of that last weekend.
I have some fresh sausage hot Italian seasoning.  If I just add some cure
it could then be smoked, right?  What recipe did you use?  Let me know how it turns out.

He Nepa,

Looks good.  Id love to see a sliced picture of that bad boy!  I'm still trying to figure out the best way to get a nice presentation of "white fat spots" in my sausages.  I usually just use the larger grinder plate, but I may try and finely chop some pork fat next time around.

Either way, I'll trade ya some smoked salmon for a summer sausage sandwich???!!! :D :D :D

I may not feel the same way when it arrives at the post office in two weeks though! ;D ;D ;D

The question is not how it looks but how it tastes!

NePA for whatever reason seems to never share recipes. I think it ought to be a rule that if you post a picture, you have to post the recipe!

Very nice.  Thanks for the money shot!  I actually like the "not perfect" shape from stuffing by hand.  It gives it a bit of an old world look.

I also admire your self control!  Leave that in the fridge for a full day before slicing :o :o :o  I usually burn myself with the first piece!!

The recipes for the beer are nailed up on the wall next to the grain mill!  All you have to do to see them is come to Snoqualmie!
