Lets have some fun and see which one I go with.

Early AM i am going to smoke my ham. I have no Hickory for my Bradley, Just JB Oak. Do I drive 33 miles to get Hickory?

OR Just use Oak

OR

MAK

OR

Smokehouse.

Which one will I use?

I would stick as close to the traditional method as i could get,
go with the smokehouse!

Load up the Jerky Pup and drive to get some Hickory for Kikory....uh, Kiki.

As much as everyone would like to see you use the MAK can you hold 120* for 12 hours with the MAK? Without SMOKE? How well can you hold temps in the Smokehouse for extended times? Looks like the best option is the Bradley with the PID. Buddy

Added:Looks like your going to have to make that 25 minute drive. Since you failed to follow the 6P's of life and just couldn't wait the full time period. 6 P's are Prior Planning Prevents a Piss Poor Performance!!

Ok after talking with sensei 10.5 here is how i'm doing the ham.

Hanging in 6 rack @120* no smoke for 12 hours. I hope i have the hook through the tendon  ;D Doubled rack just in case it falls.

Rick after looking at your pictures I am of the belief that even if you didn't hook the tendon. You will be fine since you left that tough old skin on there. I can pretty much guarantee you aint gonna pull that hook through the skin. Can't wait to see that big ol girl all smoked up the way we discussed.

I tried to get close to the bone with the hook. And your right the skin is tough, i had to use a knife to cut the skin on the pic side. Just checked 5 mins ago. All is well  ;D

I checked of the 6 rack.   I also have an OBS but it wasn't an option

Sleep Well Grasshopper it will be fine, I don't think it will fall.
