Title: Turkey Smoke

Will be brining, applying a rub, then smoking a 12lb turkey and plan to use apple and cherry, alternating the  pucks.  How long do you recommend the smoke been on?

I use four hours on a Turkey - but we like it on the strong side.

I like 3 hr Alder, and cook at a cabnet temp of 250 F
