Did my first pork butt on friday, and boy did i impress myself!!!
Used a rub and mustard slather Wednesday night, stuck it in the fridge until an hour before I started the smoke at 1 am friday.
5 hours of hickory, then 11 more hours at 210-220, 2 hours of FTC, then......

The bark was excellent! i never understood how people could eat the "burnt" part like that until i tasted it, now i don't understand how a person couldn't like it, its the best part!!

The bark is the perfect condiment to the interior.
