Title: Basic dry cure to grams
Post by: tomsbjorn on April 11, 2010, 01:52:18 PM
Hello again

I'm trying to work out the basic dry cure to Swedish and we use grams and I'm wondering if anyone can look at this and see if I'm on the right way. Pound and ounces is in Troy, am I right?

1 pound pickling salt =375grams
8 ounces granulated sugar=249grams
2 ounces pink salt (Cure #1)=62grams

Thanks...

Can't really give you any specific help here.  Sites such as the following have a bunch of conversions:  http://www.lemelange.com/conversion_chart.htm

I was always taught that there were 454 grams in a pound.    Also there were 16 ounces in a pound so 8 ounces should be 227 grams.    Again since there are 16 ounces in a pound, then 2 ounces should be 56 grams.

1 pound = 454 grams.  I use that conversion lots at work.  Link below for conversion software.

Excellent converter software for free.

ok, here's what I came up with

1lb = 16oz. = .453kg = 453g pickling salt
8oz. = 28.349 X 8 = 226.79g sugar
2oz. = 28.349 X 2 = 56.698g pink salt

Thanks everyone. When I did the conversions I had the option of using ounces in Troy or Avoirdupois. I didn't know who were the used one in U.S

When you are on the recipe site, look at the right side of the tool bar and click on "Converters", that will display a drop down menu of four different conversion calculators; in your case you would choose the "Weight Converter".

Google is great too, just type something like "8 ounces in grams" into google and it will automatically convert it for you.  Works with practically any unit of measurement.

When I measured the pink cure #1 on my grain scale I came up with 87.5 grains per level tablespoon.

You can enter 5 pounds of meat on this recipe to get 1 t of cure and the grains. You can convert the grains to grams...

Here is the conversion for the Basic Dry Cure, I will post this on the recipe site also. You will find when using recipes grams are usually round up or down.

1 pound/450 grams pickling salt (actual grams 453.6g)
8 ounces/225 grams granulated sugar (actual grams 226.8g)
2 ounces/55 grams pink salt (actual grams 56.7g )
