Post by: Smoke some on April 17, 2010, 04:56:46 PM
Smoked Pears with mascarpone Cheese

Was in the mood to try something new again, looked around the
Kitchen to see what I could come up with, spotted the wife's
Table display, pears, apples and bananas, the thought of smoked pears
Kind of sounded weird, but the more I thought about it the better it sounded
just had to try it.
Grabbed a bowl and stole six pears from her table center piece.

Well I did not make it very far and I was busted, the fruit basket was for
Some get together she was going to this afternoon. Managed to sneak a couple
From her Anyway.  Looks like my experiment is back on.
Sliced a couple in half and cored them.

Mixed up a sauce to pour on them

1 1/2 cups apple juice
  1 tablespoon brown sugar
  1/2 tablespoon cinnamon
  2 tablespoons butter
Heated it up in microwave to melt the sugar, gave it a good stir and
Poured it on pears.

Set the smoker to 300 degrees and loaded it with 1 1/2 hours of apple pucks

Ok now on to the topping

4oz of mascarpone Cheese
1 teaspoon vanilla extract
2tsp sugar

Mixed these all together, then spooned it on top of pears and Drizzled

Interesting, don't think I've heard of that cheese though.

Mascarpone is a triple-creme cheese, made from a generally low-fat (25%) content fresh cream. It's made from the milk of cows that have been fed special grasses filled with fresh herbs and flowers – a special diet that creates a unique taste often described as "fresh and delicious."

Nothing special about mascarpone i preferr the Philly cream cheese
myself, just happened to be out of it so I used mascarpone

The pears look interesting. I may have to add that to my list also.

Kevin;

I love mascarpone cheese. It is sweet, has a very silky texture, and it's taste is very similar to whipping cream. I use it often when making frosting or fillings for baked goods. You can generally find it in most super markets where they have their specialty cheese. I come in tubs.
