Title: First Shrimp & Salmon

Local Market Street was giving away a free pound of shrimp with $10 purchase so I figured I might as well try my first shrimp smoke on the freebies.  Picked up two 8 oz. salmon fillets to throw in as well.  Put some Tom Douglas Salmon Rub on the fillets and some Cajun Shake on the shrimp.  Used apple pucks.  Shrimp took an hour at 210* and fillets 2:45.  Both were excellent.  Will use something different on shrimp next time as the cajun shake was a little salty but they were amazingly tender and the smoke flavor was spot on.

Sounds good.  We love the Tom Douglas Steak Rub.  I'm going to have to try the shrimp thing now....

I used his Pork Rub on a butt on Saturday and it was great as well.

DT, did you know that now offer a BBQ class at A&M.

Serious, My sons meet the Pit Master and it is an accredited course there now.

Got some of A&M's jerky and it wasn't too bad.

Not kidding you, He is the same guy that has been making the jerky sold around the campus for a while.

He gave my son's his recipe for ribs and I really wasn't impressed.

Serious, he starts/teaches them all the different ways to grill/smoke food.

I talk to him on the phone for a cpl minutes, but think he had a fire and had to go.

They end up smoking food on a off-set.
