Jerky Jeanne Style

Use 5 lbs of sliced meat (beef elk or deer) sliced about 3/8" thick

Mix 5 tablespoon of Morton's sugar cure
5/8 teaspoon cure that is in the small foil packet inside the sugar cure bag.
5-7 teaspoon brown sugar(or more to taste)
2 1/2 teaspoon black pepper (course)
    2 1/2 teaspoon Johnny's garlic salt
1/2 teaspoon cayenne pepper (or more)
4-5 good shakes of crushed red pepper

In a container place a single layer of meat and sprinkle (like it has snowed lightly) repeat. Cover and refrig overnight.
Cook slow and low. Under 150 for 4-5 hours. Check meat in 2 hours and rotate racks. Good luck.

Hi Leeroy,

Smokin' time is a matter of taste, but most of us rarely go over 4 hr.  Do a search for jerky on the Forum and you'll certainly find some smoking time recommendations--I suspect they will be for 4 hours of smoke.
