I got my first go at some maple bacon done this weekend.
Started with five pounds of belly, on really nice piece and one not so nice.
I used the 10.5, Habs (THANKS GUYS!!!) maple cured recipe.
I cured for seven days, then smoked with 4 hrs worth of apple. I think
the total smoke/cook time was around 10 hrs(going to IT of 140). I may have been
drinking and lost a few hrs some where ;). I turned out GREAT!! Some of the best bacon I
have ever had, and I have had a lot. I will be doing this again soon as I only have about two Lbs
left in the freezer. Licked up a pound this morning and gave a bunch away.
