Title: Maple cured BACON

I got my first go at some maple bacon done this weekend.
Started with five pounds of belly, on really nice piece and one not so nice.
I used the 10.5, Habs (THANKS GUYS!!!) maple cured recipe.
I cured for seven days, then smoked with 4 hrs worth of apple.  I think
the total smoke/cook time was around 10 hrs(going to IT of 140).  I may have been
drinking and lost a few hrs some where ;).  I turned out GREAT!! Some of the best bacon I
have ever had, and I have had a lot.  I will be doing this again soon as I only have about two Lbs
left in the freezer.  Licked up a pound this morning and gave a bunch away.

That sure does look good!! Better watch out handing out them samples. Samples turn into orders. Nice Job SNC

That bacon looks great.

Isn't funny how giveaways turn into requests for more!

One of the flats I have curing for pastrami is earmarked for one of my daughters friends.

Thats lookin amazing.  I bet you will never eat the packaged stuff again
I get more requests for bacon then I can shake a pork belly at
A guy wants to trade some venison roasts for some bacon, might just take him up on that
