Title: Jerky time

I know the temp should be 170-200 but for how long should i smoke it
i'm making ground jerky and shooting it its already in the fridge for 24 hrs
its cracked pepper&garlic 4lbs

any info would be great. thanks in advanced

Most people put an hour of smoke on jerky, due to the high surface to mass ratio.

it depends on your personal taste.   I usually smoke for 2 - 3 hours.    I run the smoker at about 180ยบ.   You have to watch the jerky.    You want to have it bend, not break.   Too long and it becomes brittle.

so if i use hickory for 2 hrs a@ 180 rotate the racks about an hour later i should be alright (?)

oh yeah do  i use water or not. i see different treads on what people use.

You need water during the smoking.   You need something to catch the used bisquettes.    After that you can take it out if you like.

I dont use water in the pan, creates moisture.
