Does my patio smell GREAT.

Pastrami in the OBS getting Pecan, Ribs in the MAK getting Hickory!

I wish I could bottle it and mail all y'all a sample.

NICE!!!  You've got two smokers going... geesh, I'm jealous :-)

I'm wanting to try doing a pastrami.  I love rubens and am thinking about taking stab at it.

Just do it. Get yourself a brisket flat and some cure.

I'll warn you though. That pastrami at the deli will not do anymore...

I guess had I stayed in St Augustine a few days longer I could have caught a whiff of that smoke.  Naw, that would have just made it worse after eating the sampler platter at Sonny's and knowing what I was missing at your house.

Yeah, pastrami is high on my list of new things to try.  Never done any curing so it will be new.  I'll let you know how it goes when I tackle it.

To get your feet wet with curing, I would suggest the Canadian Bacon by Habanero Smoker. It's really easy and turns out great.

And take pictures  ;D

Pastrami is a piece of cake, so is the Canadian Bacon although I prefer the pemeal variety myself
Corned beef is easy.  Its all easy. 

The one thing I have learned here is to throw the fear away and follow the Nike slogan:
