Title: How big a shoulder?
Post by: jnairn on May 13, 2010, 07:47:26 AM
Going to try pulled pork on Sunday. It's for 4 guys on our annual fishing trip. What size shoulder would make enough for 4 big appetites considering weight loss during smoking/cooking process?

Thanks
John

1 shoulder weighin about 7 lb would be plenty for 4 big eaters.

You will loose approx 30% when cookin.

Its goin to be a loooooooooooooong cook, be prepaired for a 3 to 4 hr stall around 160 F then it might even drop a little before the IT starts to climb again.

I usually do 4 butts.

One gets completely destroyed by my family of six.

The second one gets pulled and goes in the fridge for sammies and snacks.

the other two get pulled/ vac sealed / frozen.

I would do two, so you have some leftovers. It really doesn't add a lot to the cook time.
