The Salmon Brine/Marinade #2 from Fuzzybear looks brilliant.[:D]
Oak hot-smoked some salmon fillets last weekend, half were done in a rum based brine/marinade and half in a honey based brine/marinade..... the results were out of this world!! (not my words, those of a couple of people that tried the salmon and gave them a 10/10!)[:D][:D]
Used Kummock's recommendations with regards to smoking and cooking times.[:D][:D]
Now combining the rum and honey.....WOW!
Not had much joy with cold smoking salmon as yet, the results have been rather mushy.[:I] Time to try Spyguy's method methinks.[8D][:D]
Manxman.
I have used the Bradley recipe a couple times, and Kummok's all the other times. It is so good that I haven't tried anything else.
Fuzzy's #2 looks really yummy though....me thinks it's time to try a new recipe! [:D]
