I know I have seen this on here before but can't find it right now. I have cold smoked garlic heads several times but the other day my sister asked if I coud hot smoke/roast some garlic for her. I said sure as soon as I ask my friends how to do it. :)

I bought a jug of the pre-peeled garlic from Sam's, mixed it w/EVOO, salt, pepper in a dutch oven and put in the smoker.
Normally it takes about 45mins-1hr in an oven, but at 225 in the smoker, it was like 3-4 hrs (didn't really time 'em)
Stirred 'em up abount once an hour.

Thanks so about 3-4 hours @ 225, I'm thinking 3 hours of smoke should be good.

I kept the smoke rolling pretty good, and it didn't make the garlic too smokey...
Came out great..
Just roasted garlic with a nice touch of smoke flavor.
Now that sounds like a must do!

These were done at 215F for about 2.5 hrs. just until the pulp squeezed out easily.

It is now "MY" baking dish. Her "NEW" set of baking dishes is off limits to me. ::) :D

(perfect size for my smoker - and any bigger would be too dang heavy filled w/whatever)
Great for smoked roasted garlic - but also great for smoking baked beans or red beans n sausage!
And, one of these days... I need to smoke some cornbread!
