I have never seen tri tip over 3 to 4 lbs. Are those 5 wrapped up together?

Is that the whole sirlon at 23 pounds?

I don't think I'd like to see that heifer/steer that 23 pound tri-tip came from! Interesting, but scary! 7700 pound heifer/steer!

Must have been a "Babe" relative
A BIG tri tip is ~ 3 lbs, although USDA IMPS specs allow for as much as 8 lbs. Whole sirloin is in the range of 16-28 lbs, and most of that is the top sirloin.
Your purchase is astounding. My bigest tri-tip has been around 6# untrimmed. I smoked two Sunday that were 8# total, untrimmed. Will be looking forward to your pic's etc.
If I'm not mistaken, the tri tips at S & F come in several tri tips in cryovac bag.
I bought 3 tri-tip last week and they came out of a cryovac bag and he trimmed them up.
after opening both sealed bags was a total of 13 pieces of tri tip and cook it all in my 4 rack Bradley at once, ... only thing i can say is im glad i had a 900 watt element to deal with the load, with smoke and cook it took 18 hours to smoke and cook it all at a box temp of 210 and aan it temp to 175 - 185 MOST fell apart at that point
