I did a 4lb eye round.
After trimming, it was 3lbs.
After slicing on a deli slicer, adding cure and seasonings, 3lbs went into the dehydrator, 1lb 4oz came out.
I have 5lb of nuggets still in the dehydrator.
There's something wrong with the math there. You started with 4lbs of meat and ended up with 1lb 4oz and 5lbs so you've now got 6lbs 4oz. ??? Must be some a good pile of seasonings on them. ;D
The 5lbs was another batch.
It was actually 4lbs, and it netted 1lb 12oz of jerky nugget goodness.
So about 40% yield ?

You will loose just about half the weight due to moisture loss.
Say you have a 2lb london broil after trimming. After smoking/dehydrating your going to end up with just about 3/4 pound. If you have 2 pounds of finished jerky from you 2 pound slab of meat lemme know how you did it ;D

It really is not that far from the truth.
One of the reasons I bought the OBS in the first place (and got started in this "madness") was that we were (and are) on a low carb diet and jerky was the snack of choice.
But it is expensive in the stores, so.... "lets make our own!"
now I have an OBS, 2 BPS, Cabelas 80L dehydrator, MAK 2 star general, PID's Mavericks, thermoworks.....
I get about 50% but I like mine a bit more moist and chewy... I had to put a piece down to type this ;D

Just to think that you can build a custom smoker that will hold 80 pounds of jerky. It never ends does it? LOL.......I am still waiting to be able to get my 1st OBS and hope to be able to get it soon. Work is starting to roll in and I think I can spring for it soon. I don't know why the wife seems to think that the mortgage payments need to be paid before play toys are bought. sigh ;D
