Title: Jerky Nuggets question

I am marinating some eye of round that I cut up last night (~ .75 to 1" bits) in a wet marinade, soy sauce, Worcestershire, garlic, onion, cure, brown sugar. Was planning on smoking it for 1:40 and then drying it.

Approx how long should the smoke and dry process take. I know its done when its done but, 6 hours, 10...what kind of ballpark?

I also have oven jerky racks from cabelas that I could use to finish it off.

Right now my plan is (ad libbed from several posts here), 1 hour at 140F to dry, then smoke for 1:40 at 150F then dry till done..

Does that sound reasonable?

I did mine for about 7 hours @150F in my dehydrator - both smokers were full!

Your on the right track but you might want to bump the IT to 165-170*
